Oreo Cupcakes

September 23, 2011 by admin 11 Comments

I love cake and I love baking. I’m not so good at cleaning up the mess afterwards though, and I’m also a  bit slap dash as you’ll see from my recipe, but these Oreo cupcakes are AMAZING!

This is our favourite cupcake recipe. Z and S like to lick the spoon then rapidly lose interest.

Ingredients

125g butter

125g self raising flour

125g caster sugar

2 eggs

1/4 tea spoon baking powder

A splash of vanilla essence

Oreos

Ready made frosting

Recipe

Just bung all the ingredients apart from the oreos and frosting into your mixing bowl and mix well for a few minutes, until light and fluffy ish.

Divide into about 6 large muffin cases, more if you are making smaller cakes.

Squish an oreo into each one, making sure it is covered with cake mixture.

Oreo cupcakes

Bake for about 15 minutes at 180 degrees or until slightly brown on top

Leave to cool.

Add frosting to a piping bag, with a nozzle on the end ( I usually put it in the fridge for a bit to harden )

Ice cupcakes, and decorate as you want.

Thanks for linking up…I love that you put the Oreo inside the cake…I want to make them now just to see what they’re like! I like how you have the ready made icing as part of the ingredients! Are they little pearl type decorations, where do you get those from, I keep seeing them on peoples cakes & I want some!
    Great photography with the cake
