Tangy Turkey Meatballs – with hidden vegetables

I LOVE turkey, we have it all year round as its a bit cheaper than chicken and a healthy alternative to beef in things like spaghetti bolognese and chilli.

Ingredients

  • 400g turkey mince
  • 3 shallots
  • 5 pepperdew
  • 75g Breadcrumbs
  • 1 egg yolk

 Sauce

  • 1 tin of tomatoes
  • 1 carrot very finely chopped
  • 1 courgette, very finely chopped
  • 5 pepperdew peppers roughly chopped
  • 1 large onion diced
  • 1 clove of garlic finely chopped
  • Olive Oil
  • Oregano
  • 1 Chilli deseeded and finely chopped (or use “cheats chilli”)

 Instructions

  • Finely chop the shallots and the pepperdew and mx together with the remining ingredients in a bowl.
  • With floured hands form approx 12 meatballs
  • Chill in fridge
  • Heat olive oil in pan until hot
  • Add Onions and fry for a couple of minutes (don’t let them go brown)
  • add the carrot and courgette
  • Add Garlic and Pepperdew and oregano and fry for a couple more minutes to bring oil back up to temperature
  • Add tomatoes and fry/boil hard for 5 minutes.
  • Brown the meatballs in a frying pan at the same time
  • Add meatballs into the sauce and simmer for 15 mins while you cook the pasta

 

My children love these. I tend to make a huge batch and freeze some for later. I like that there are some quite grown up flavours in the sauce as well
